It is not clear to me at this point if this is to allow users access to their email boxes via IMAP on our mail server or if it is solely for one hard coded email address?

I need something which would allow all users to have access to their IMAP email on our separate email server.

You got it right on the first option, the software will allow them to connect to your IMAP server by using their registered IMAP email address and pass

I figured that out eventually . It was not clear to me since there is a place to enter a user account and password.
